What you will need

iExplorer The free version is fine.
Step 1. On your iDevice open pocket planes and put any plane you want to edit into your hanger. Then close Pocket Planes and double click the home button a line of icons should appear at the bottom so hold your finger on pocket planes till a close symbol appears on the corner of it. Now close it and hit the home button once more.
Step 2. Plug your device into your computer and open iExplorer and select continue in demo mode. It should then come to a screen like this.
Step 3. Go into the apps drop down menu on the left.
Step 4. Then find Pocket Planes->Documents and click PlayerData.
Ignore the gamedata placed it in there by accident.
Step 5. Copy the user-playerdata.db to your desktop. It should be the only file in that folder.
Step 6. Now minimize iExplorer and open SQLite Database Browser then load the file you just placed on your desktop. Then click the Browse Data tab.
Step 7. In the table drop down menu select hanger.
Step 8. Now double click the aircraft you want to edit the upgrades on.
Step 9. This window should appear make your changes and hit 'Apply Changes'
Note if you change each number to 20 it will result in being 100% upgrades. I don't recommend taking the w(weight) to high because if it passes 2,147,000,000 or so profit on a flight it will then go negative. But if you alter it to say 100 you can make a large profit with every airport you pass with the plane. But go nuts for the e(speed) and t(range) as it only makes it so you can fly anywhere in the world and very quickly but 10000 on each should be more then enough.
Step 10. Save that file and close SQLite
Step 11. Place the file back into the playerdata folder in iExplorer you should get this alert then press yes.
Step 12. Close that go on your iDevice open pocket planes go into hanger and depending on what plane it you edit it should have new very high stats.
Heres an example of the Bearclaw-p being changed to have level 100 upgrades.
